If you love Thai flavors, this is the vegan tofu tacos recipe for you! After marinating the tofu in Thai red curry, soy sauce and garlic, you either bake or grill it. Then, you add to a tortilla, and top with cucumber cabbage slaw, Thai basil, crushed roasted cashews (or peanuts) and serrano peppers. It’s simple, delicious, and perfect for summer or any time!
This recipe makes ~4 tofu tacos. The yield will largely hinge on the size of your tortillas, and how you distribute the ingredients.
A few things…
- It takes time to marinate the tofu for these tacos. For best results, it needs to marinate overnight. For ok results, 5 hours will do. But the process of marinating and cooking the tofu is easy. Follow the Thai Red Curry Tofu or Tempeh Marinade recipe to get it done.
- When the tofu is done marinating, it’ll be time to make Cucumber Cabbage Slaw with Thai Basil, Sriracha, and Lime. If I know I’m making tacos, I like to add all the chopped veggies to the mixing bowl, but I hold back adding the dressing and Thai basil until I’ve just completed cooking the tofu and it’s time to assemble the tacos. Then, I mix everything in the slaw together at the last minute. It preserves the texture of the slaw and creates the best flavor.
- For a variation, marinate tempeh instead. It also works well in this dish.

Thai Style Tofu Tacos
1 batch of Thai Red Curry Tofu (see notes above)
1 batch of Cucumber Cabbage Slaw with Thai Basil, Sriracha and Lime (see notes above)
4 flour taco tortillas (If gluten free, use the variety that suits you)
Thin sliced serrano peppers, to taste
Crushed roasted cashews (or peanuts), to taste
Torn Thai basil leaves, to taste
Sriracha sauce, to taste
Lime wedges, to serve
1. First, you’ll marinate and cook the tofu for the Thai-inspired tacos. Follow this recipe to get it done.
2. If you hold back mixing in the dressing and Thai basil, you can make the slaw from this recipe any time before assembling the tacos. When the tofu is done cooking, mix in the dressing and Thai basil. Then, taste and adjust the flavors, if needed.
3. To assemble the vegan Thai tofu tacos, lay out the 4 tortillas. Distribute the tofu to each tortilla. Top each with cucumber cabbage slaw, serrano peppers, crushed roasted cashews (or peanuts), and Thai basil. Serve immediately with sriracha sauce and lime wedges on the side.
