This vegan grilled okra recipe combines three of my favorite things—grilling, okra, and curry spice seasoning! Best of all, it is incredibly easy, quick to make, and flavorful. It makes an awesome side dish to any cookout or summer meal.
To pull this off, I used a disposable aluminum sheet pan, lined it was non-stick aluminum foil, and then, covered it with aluminum foil over the top of it to grill the okra.
You can also grill okra in foil. Create a pouch out of non-stick aluminum foil, and add the okra, spices and vegan butter. I find that the pouch is a little cumbersome with so much okra inside it; however, if you make less okra or feel up to the challenge, a pouch of non-stick aluminum foil can work in a pinch.

Grilled Okra with Curry Spices
5 cups fresh whole okra
6 Tbsp vegan butter, sliced
2 tsp ground turmeric
2 tsp smoked paprika
1 tsp chili powder
1 tsp onion powder
½ tsp ground cumin
Salt, to taste
1. Line a large, shallow grill-proof pan with non-stick aluminum foil. Spread okra out in a single layer over the foil.
2. Place slices of vegan butter over the okra—spacing the butter out a bit to make sure that everything will get a good coating of butter once it’s on the grill. In a small bowl, combine all the spices together. Sprinkle over the okra evenly. Sprinkle with salt.
3. Cover the pan of okra with aluminum foil, and place on a grill that’s reached 450º F. Grill for ~7-10 minutes, or until it reaches the level of char that you prefer. Remove from the grill.
4. Stir the grilled okra to ensure that all of them are well-coated with the melted butter. If it isn’t coated well enough, add a little more vegan butter 🙂 Taste, and adjust seasonings, if needed (more salt?). Serve immediately.
