Almond Apricot Muffins


This is an easy vegan almond apricot muffins recipe with cardamom, ginger, cinnamon, quick oats and more. I like that it uses dried fruit, because it transcends seasonality. You can enjoy them any time 💚

This recipe makes ~12 muffins.

A few things…

  • ・The type of vegan milk didn’t seem to impact the apricot muffins all that much. I tried almond, soy and flax milk, and they all worked great.
  • ・No almond extract? Try vanilla extract. It will taste different, but it’s probably still good. You tell me!

  • ・You are welcome to reduce the turbinado sugar to ½ cup, if you prefer less sweetener. During testing, I gave it a try and it was successful, just not as sweet.

Almond Apricot Muffins

1¾ cup vegan milk

⅓ cup canola oil

1 Tbsp flax meal

½ tsp almond extract

2 cups all-purpose flour

⅔ cup turbinado sugar

½ cup quick oats

1 Tbsp baking powder

2 tsp ground cardamom

2 tsp ground ginger

1 tsp ground cinnamon

¼ tsp salt

⅓ cup small dice dried apricots

¼ cup sliced almonds (+ more to top)

1. Preheat the oven to 400º F. Line a 12 well muffin pan with baking cups. Set aside.

2. Next, you’ll mix up the wet ingredients for the almond apricot muffins. In a mixing bowl, whisk together the vegan milk, canola oil, flax meal and almond extract. Set aside.

3. In a second mixing bowl, add the flour, turbinado sugar, quick oats, baking powder, cardamom, ginger, cinnamon, salt, dried apricots, and almonds. Stir together. Make a well in the center. Pour the wet ingredients into the well (see center photo above). Stir until well combined.

4. Spoon the vegan almond apricot muffin batter into the baking cups. Top with additional sliced almonds (see photo to right above).

5. Bake at 400º F for 15-20 minutes or until cooked through. Remove and serve.
