Vegan chipotle mayo… delicious on veggie burgers, fries, sandwiches, grilled corn on the cob. In some places in the U.S., you could buy an entire jar, but maybe you don’t need an entire jar.
This recipe for vegan chipotle mayo is super easy, has 6 ingredients, and tastes awesome. It makes ~½ cup to be enjoyed on whatever you want 🙂
Vegan Chipotle Mayo
½ cup vegan mayonnaise
1 chipotle pepper in adobo sauce
½-1 tsp adobo sauce
½ tsp lime juice
½ tsp garlic powder
Salt, to taste
1. Smash and pull the chipotle pepper apart with a fork until it resembles pulp. Add it, and the remaining ingredients to a small bowl.
2. Fold everything together with a spatula. Taste, and adjust seasonings (add another pulverized chipotle pepper? Add more adobo sauce? Salt?). It’s ready to use!
