Snap Pea Salad Recipe with Radish Vegan

Perfectly suited for spring, this is a super easy snap pea salad recipe with radishes, carrots, arugula, red onions and a homemade vegan honey mustard dressing. This salad is flavorful, fresh and makes an excellent side dish.

This recipe makes ~4-6 servings.

Two things…

  • Because bees are animals and they produce honey, it wouldn’t be vegan to use real honey in the dressing for the snap pea salad. I subbed in maple syrup. You could also try agave.
  • My prepared horseradish was not smooth, so for the dressing, I opted to use a high speed blender to break up the bits. Do what works for you.

Snap Pea Salad with Radishes, Carrots and Vegan Honey Mustard Dressing

¼ cup thinly sliced red onion

Distilled white vinegar

3 Tbsp maple syrup

1½ tsp ground mustard powder

½ tsp garlic powder

¾ tsp onion powder

½ tsp prepared horseradish

½ tsp salt

2 Tbsp olive oil

1 pound sugar snap peas (OR ~4 cups sugar snap peas)

1 cup sliced radishes

⅓ cup shredded carrots

A large handful of arugula leaves

1. First, you’ll marinate the red onion for the vegan snap pea salad recipe. In a small bowl, add the red onions. Pour distilled white vinegar over them until they are submerged. Set aside.

2. Next, you’ll make the vegan honey mustard dressing. In a mixing bowl (or blender, if your horseradish is not smooth), add 1 Tbsp of the distilled white vinegar the onions were marinating in, maple syrup, mustard powder, garlic powder, onion powder, horseradish, salt, and olive oil. Whisk or blend together.

3. Pour the dressing from the blender into a large mixing bowl. Drain off the vinegar from the red onions. Add the red onions, snap peas, radishes, carrots, and arugula to the mixing bowl. Toss together. Taste the vegan snap pea salad and adjust seasonings, if needed (more maple syrup? more salt?). Serve.
