This recipe for radish salad is best served right away. The flavors and the crunchiness are at their height! As always, fresh dill is the best choice. You can try dried dill (maybe 1 tsp or 2). It won’t be quite the same, but it’s still pretty good.
Radish Salad with Fresh Dill and Scallions
4 cups thinly sliced radish bulbs
¾ cup thinly sliced celery
2 scallions, thinly sliced
¼ cup finely chopped fresh dill
¼ cup distilled white vinegar
½ tsp salt
2 Tbsp raw sunflower seeds
- 1. In a large mixing bowl, add radishes, celery, scallions, dill, distilled white vinegar, and salt.
2. Mix everything together in the bowl. Taste, and adjust seasoning (more salt? more vinegar?).
3. Top with raw sunflower seeds, and serve immediately.
