Inspired by Slavic flavors, this vegan red radish salad recipe has a pleasing, bright flavor with fresh dill, scallions and distilled white vinegar. It offers a nice counterbalance to rich foods. I feel like it would go very well with Vegan Potato and Onion Pierogi or with a large, holiday spread. It’s always nice to have a lighter dish in the mix.
This radish and dill salad uses simple ingredients, is easy to make, and has a refreshing, crunchy texture. It works well for the winter or spring, but really, you could enjoy this year round.
It’s best to serve this right away when the flavors and the crunchiness are at their height! As always, fresh dill is the best choice. You can try dried dill (maybe 1 tsp or 2). It won’t be quite the same, but it’s still pretty good.

Radish Salad with Fresh Dill and Scallions
4 cups thinly sliced radish bulbs
¾ cup thinly sliced celery
2 scallions, thinly sliced
¼ cup finely chopped fresh dill
¼ cup distilled white vinegar
½ tsp salt
2 Tbsp raw sunflower seeds

- 1. In a large mixing bowl, add radishes, celery, scallions, dill, distilled white vinegar, and salt.

2. Mix everything together in the bowl. Taste the celery and radish salad, and adjust seasoning (more salt? more vinegar?).
3. Top with raw sunflower seeds, and serve immediately.
