Vegan Classic Coleslaw

Years ago, I had an online dating profile. And on that profile, I listed “Vegenaise” as one of my favorite things. It sent the right message to the right person, because today, I am happily married to that person.

This creamy vegan coleslaw tastes great. It’s so easy to make. If you buy a package of tricolor coleslaw mix from your grocer’s produce department, it can be even easier. It’s a hit at vegan cookouts, vegan picnics, or a vegan summer side dish. And man, I love it with grilled barbecue soy curl quesadillas!

Vegan Classic Coleslaw

6 cups shredded green cabbage

1 cup shredded red cabbage

1 cup julienned carrots

2 scallions, diced

3/4 cup vegan mayonnaise (I used Follow Your Heart Vegenaise)

1 Tbsp apple cider vinegar

1/2 tsp onion powder

1/2 tsp garlic powder

1/4 tsp celery seed

1/4 tsp salt

  1. 1. Mix everything listed in the recipe in a bowl. Taste, and adjust seasonings, if needed (more salt?). Serve.
