This classic vegan coleslaw recipe is super quick. All you need to do is chop some veggies, add everything to a bowl and mix it together. If you buy a package of tricolor coleslaw mix from your grocer’s produce department, it becomes the easiest recipe ever.
Outside of any sweetener in the vegan mayo, this vegan coleslaw has no additional sugar. It’s a hit at cookouts, picnics, or as a side dish. And it’s so good with grilled barbecue soy curl quesadillas or with some bbq jackfruit sandwiches.

Vegan Classic Coleslaw
6 cups shredded green cabbage
1 cup shredded red cabbage
1 cup julienned carrots
2 scallions, diced
3/4 cup vegan mayonnaise (I used Follow Your Heart Vegenaise)
1 Tbsp apple cider vinegar
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp celery seed
1/4 tsp salt
- 1. Mix everything listed in the recipe in a bowl. Taste, and adjust seasonings, if needed (more salt?). Serve.
