Vegan Classic Coleslaw
6 cups shredded green cabbage
1 cup shredded red cabbage
1 cup julienned carrots
2 scallions, diced
3/4 cup vegan mayonnaise (I used Follow Your Heart Vegenaise)
1 Tbsp apple cider vinegar
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp celery seed
1/4 tsp salt
Mix all the vegan creamy coleslaw ingredients listed in the recipe in a bowl. Taste, and adjust seasonings, if needed (more salt?). Serve.
