This creamy vegan coleslaw recipe tastes great. It’s so easy to make. If you buy a package of tricolor coleslaw mix from your grocer’s produce department, it can become the easiest vegan coleslaw ever. It’s a hit at cookouts, picnics, or as a vegan summer side dish. And man, I love it with grilled barbecue soy curl quesadillas or with some bbq jackfruit sandwiches!

Vegan Classic Coleslaw
6 cups shredded green cabbage
1 cup shredded red cabbage
1 cup julienned carrots
2 scallions, diced
3/4 cup vegan mayonnaise (I used Follow Your Heart Vegenaise)
1 Tbsp apple cider vinegar
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp celery seed
1/4 tsp salt

- 1. Mix everything listed in the recipe in a bowl. Taste, and adjust seasonings, if needed (more salt?). Serve.
