Zucchini and Corn Recipe Vegan

Initially, I had an entirely different plan for this dish. After failing several times in a row, I decided to scrap most of the plan, but stick with the key ingredients. After some additional brainstorming and testing, we have this delicious warm vegan zucchini and corn recipe with plant based feta, fresh oregano, lemon juice and more. It’s bright, savory, sweet and totally summer. Sometimes, you wind up better than your plans, if you allow some room to deviate.

This recipe makes ~6-8 servings.

A few things..

  • I used Follow Your Heart Dairy Free Feta-Style Crumbles. It does add to the overall flavor of the zucchini and corn, so I wouldn’t skip it without some compensation. Maybe you add some additional salt or garlic? If you do leave it out, I’d like to know what you thought or how you solved for max flavor.
  • No fresh oregano? While I haven’t tested subbing in 1 Tbsp dried oregano, I think it’ll do just fine.
  • If you use fresh oregano in the zucchini and corn dish, it will lose it’s vibrant green color. It naturally turns brown or black when heated.

Zucchini and Corn with Vegan Feta and Oregano

2 Tbsp olive oil

1 cup diced red onion

4 cups diced zucchini (~3 medium zucchini, diced)

2 garlic cloves, finely chopped

2 cups fresh sweet corn (~2 medium cobs with the corn cut off)

1 Tbsp lemon juice

1 tsp white wine vinegar

3 Tbsp finely chopped fresh oregano (see notes above)

Salt and black pepper, to taste

Vegan feta, to taste

1. In a large, deep skillet, add the olive oil, red onion, zucchini and a dash of salt. Stirring constantly, sauté over medium-high heat for ~5 minutes or until the onion softens and the zucchini glistens.

2. Add the garlic and sweet corn to the zucchini. Stir around ~2 minutes. Remove from heat.

3. Add the lemon juice, white wine vinegar, oregano, salt, black pepper and vegan feta. Taste the zucchini and corn. Adjust flavors, if needed (more lemon? salt? feta?). Serve immediately.
